- In a large salad bowl add your spring salad mix, take your divided pomegranate and pluck out the seeds into the salad. Slice the cucumber into rounds and add it in along with the almonds. Skin your avocado and take the seed out (see video), slice the avocado and cover with the lime juice so it doesn’t brown. Skim slices of the goat cheese with a veggie peeler and toss together.
